The current on-hand bean comes from the Lake Toba region and is a classic Lintong area coffee. The bean is wet-hulled in usual Sumatra style; however, with this bean the hulling was not done until it reached 30% moisture content. This gives it a cleaner cup and accentuates the spicy, bright notes while downplaying the earthiness.
